Pan con Tomate

This tasty tapa is inspired by the Spanish dish but with more garlic and tomatoes marinated in olive oil and basil.

Prep: 15 minutes

Cook: 8 minutes


  • 1 French baguette
  • 3 Roma tomatoes
  • 8 fresh basil leaves
  • Olive oil
  • Salt
  • Pepper
  • Garlic confit
  • Garlic oil (from making the garlic confit)


  • Oven, with broiler
  • Refrigerator
  • Bowl


  1. In a bowl, toss the tomatoes in olive oil, basil, salt, and pepper. Let marinate in the fridge for at least an hour.
  2. Cut the baguette into 1/4 inch slices, at a 45-degree angle
  3. Brush both sides of each piece of bread in garlic oil
  4. Toast bread 3-4 minutes on both sides under a broiler
  5. Spread 1 garlic confit clove on each slice of bread
  6. Top each piece of bread with marinated tomatoes
  7. Enjoy!
